Ski flying is the version of ski jumping on the very large hill, with flights of well over a hundred metres. For a personal policy this is not an insurable activity.

Ski flying is practised on a handful of flying hills worldwide and exclusively by selected competitive athletes. There is no recreational version you can sign up for. Anyone who practises the sport does so through a federation; cover runs through the federation or through a policy for professional athletes, not through travel insurance.
For most visitors to this page the practical question is a different one: you are travelling to a ski flying competition as a spectator. That is ordinary travel cover — with the proviso that cancellation because of the weather happens more often at this type of event than at other winter sports competitions.

Two points that make the difference at this event.
The standard exclusions on travel and accident policies are off-piste mountain sports, air sports, diving below a stated depth and taking part in competitions. Ski flying falls under the last two at once and is, moreover, exclusively a competitive sport. Additional adventure cover does not change that.
Parachuting and skydiving
If the competition does not go ahead because of wind or snowfall, that is normally not a covered ground for cancellation: the trip itself can still take place. Cancellation insurance covers personal circumstances, not a changed programme. Read the organiser’s refund policy before you book.

No. Flying hills are open only to jumpers with federation selection and a licence. There is no recreational version and therefore no insurer offering cover for it.
Yes. Your travel insurance covers travel, accommodation, baggage and medical costs as on any other trip. Your liability on the event site also runs through your liability insurance as normal.
That is a matter for the event organiser, not your insurer. Cancellation insurance covers personal circumstances such as illness or a death, not a sporting event failing to take place. Read the refund policy before you book.
It is the same movement on a much larger hill, with higher speeds and longer flights. In insurance terms there is no difference: both fall under the exclusion for competitive sport.
