In a kitchen and front-of-house team you work with permanent staff alongside on-call workers, seasonal workers and temporary contracts. Your insured wage bill is therefore not a fixed figure: you pay on the basis of an estimated annual wage and the insurer recalculates afterwards using your actual payroll returns. If you estimate too low, an additional assessment follows in exactly the season when you need the money.
The second point is that absence here is mostly short. Cuts, burns, stomach flu and back complaints after a busy weekend lead to sickness reports of days, not months. With a long waiting period you pay for all those cases yourself; with a short waiting period you pay for them through the premium.
If a temporary contract ends while someone is ill, your obligation to continue paying wages ends and the UWV takes over. Your policy stops at the same time.

Four points that make the difference between a policy that pays out and one that does not.
With an on-call worker on a zero-hours contract it is not immediately clear what amount you must continue to pay during illness. Usually the average over the preceding period is used. That average is also exactly what the insurer pays. So keep a record of the hours worked per on-call worker. Without evidence of the average wage you will face discussion about the amount of the payment.
If a temporary contract or a seasonal contract ends while the employee is ill, your continued payment of wages stops and the Sickness Benefits Act takes over through the UWV. From that moment your sickness absence insurance pays nothing further. Report the illness on leaving employment to the UWV on the last working day. In the rush that report is often forgotten and it can cost you a fine.
The typical hospitality sickness report lasts from a few days to two weeks. If you choose a waiting period longer than that, almost all your absence falls outside the cover and you insure only the rare long-term case. That can be a deliberate choice. But do work out what a normal year of uncompensated sick days costs before you go for the lowest premium.
Not covered are: absence that already existed when the policy started, hiring an agency worker or scheduling extra hours for colleagues, and loss of turnover because you keep the business open for shorter hours. Pregnancy and maternity leave is not illness. Incapacity for work that the employee has caused intentionally also falls outside the cover under Article 7:952 of the Dutch Civil Code.

Yes, as long as they are on your payroll and you must continue to pay wages during illness. The payment is then calculated on the wages you actually owe, usually the average of the preceding period. Keep careful records of the hours worked, because you must be able to support that average with your payroll administration when you report a claim.
Your obligation to continue paying wages then ends on the end date and the UWV takes over the payment under the Sickness Benefits Act. Your sickness absence insurance pays nothing after that. You must report the sick employee to the UWV as sick on leaving employment by the last working day at the latest. If you forget, the UWV can impose a fine.
During the year you pay an advance premium based on an estimated wage bill. Afterwards the insurer compares that estimate with your actual payroll returns and settles the difference. So in a good season you pay extra. Give a realistic estimate at the start, including the peak months, so that the additional assessment is not a surprise.
Yes. The insurance does not look at the cause of the incapacity for work, but at whether you must continue to pay wages. A broken ankle while playing football therefore gives the same cover as a cut in the kitchen. Only where the employee acted intentionally can the insurer refuse the payment.
