Private individuals mostly take up skeleton as a guest run on a bob track, booked with the track operator and ridden under supervision. That is not the same as competitive sport, but the speed and the forces in the corners are the same, and insurers reflect that in the risk class.
The winter sports module will not help you here. It covers skiing and snowboarding on the piste; a run down an ice channel is separate from that. With many insurers, skeleton also comes close to the exclusion for speed contests, certainly once times are being recorded.
The operator will almost always have you sign a waiver declaration. That limits your ability to pursue the track under Article 6:162 of the Dutch Civil Code, but it arranges nothing about your own cover. So report the run to your insurer in advance.

Two points that decide whether your policy pays after a run down the ice channel.
The standard exclusions on travel and accident policies are speed contests, mountain sports off the beaten track, air sports and diving below your certified depth. A supervised guest run sometimes still falls outside the first category. A run in which your time is recorded or a classification is drawn up does not.
The track operator has you sign that you accept the risks. That works between you and the track and limits a claim under Article 6:162 of the Dutch Civil Code. Your own medical costs and a payment for disability depend solely on your policy. Report an accident straight away (Article 7:941 of the Dutch Civil Code).

Not automatically. The winter sports module covers piste skiing, not a run down an ice channel. Some insurers include a supervised tourist run if it is reported in advance; ask for written confirmation before you book.
Then the run comes close to a speed competition and the exclusion applies with almost every insurer. That also goes for training runs that form part of a competition programme.
It mainly protects the operator. It limits your ability to hold the track liable, but it says nothing about your cover. Your policy conditions determine whether anything is paid.
Injuries from impacts against the track wall: neck, shoulder and head. Check the personal accident cover in particular, and the scale of benefits for permanent disability, alongside cover for treatment and transport home.
