In monoskiing you stand with both legs side by side in bindings on one ski. You use the same lifts and the same pistes as other skiers. Insurers look not at the equipment but at the place and the manner in which you ski: on a prepared and open piste that is ordinary winter sport.
With many travel policies, winter sports cover is a separate module with a loading. Without that module there is no cover for medical expenses and equipment even for ordinary skiing. So first check whether the module is on your policy and for which period.
The picture changes as soon as you leave the piste. Monoskiing in powder off the piste, in couloirs or in closed areas falls under the same exclusions as off-piste skiing and freeriding. Also speed contests are not included.

Two points that determine whether your policy pays after a fall.
The standard exclusions on travel and accident policies are mountain sports off the beaten track, air sports, diving below your certified depth and speed contests. Monoskiing on the piste touches none of them; monoskiing in uncontrolled terrain touches the first. One ski or two makes no difference to that assessment.
If you run into another skier, your liability is judged under Article 6:162 of the Dutch Civil Code, with the FIS rules of conduct as the yardstick. Your liability insurance pays, unless there is intent or deliberate recklessness (Article 7:952 of the Dutch Civil Code), for example skiing under the influence.

On the piste, usually not. Insurers treat it as ordinary winter sport, provided you have winter sports cover. Off the piste it is regarded as a risk sport, just like off-piste skiing and freeriding.

Usually not, as long as you stay on the piste. If you take it off-piste or take part in competitions, do declare that in advance and ask for written confirmation of the cover.
Often only to a limited extent. Winter sports equipment falls under the luggage section with its own maximum, and theft from a car or from a ski rack is regularly excluded or limited. Keep purchase and hire invoices.
